Yummy, sweet and cinnamon-spicy! Much like it's distant cousin, the carrot cake, zucchini bread is a delicious blend of good-for-you vegetables and nuts and not-so-good for you other ingredients.  Nevertheless - the result is scrumptous. *Can be frozen*
