BOSSMAN'S FAVORITE!

Peach Delight

Ingredients:

TOPPING​​

  • 1 cup sugar

  • 3 Tbsp cornstarch

  • 2 cups water

  • 1- 3 ounce package of Peach Jell-O

  • 6-8 Mac's Pride Peaches, sliced

​

CRUST​​

  • 2 cups crushed graham crackers

  • 1/2 cup butter, melted

  • 2 Tbsp brown sugar

​

FILLING​

  • 8 ounces cream cheese

  • 3/4 cup powdered sugar

  • 1 tsp vanilla

  • 8 ounce tub Cool Whip

Directions:

1. In a medium saucepan, stir together sugar and cornstarch. Add the water then bring the mixture to a gentle boil, whisking often, until it forms a gel-like consistency. Stir in the Jell-O and continue to cook until completely dissolved. Remove from heat and allow to cool. Add peaches when it is completely cooled.

2. Combine the crushed graham crackers, melted butter and brown sugar in a bowl then press the mixture in the bottom of a 9 x 13 dish.

3. In a bowl beat the cream cheese and powdered sugar until smooth with an electric mixer. Beat in the Cool Whip. Spread the mixture over the graham cracker crust.

4. Once the peach Jell-O mixture has cooled to room temperature, pour it over the cream cheese mixture. Cover & refrigerate at least 2 hours or overnight. Serve cold. Enjoy!
