Kale Salad



  • 1/3 cup olive oil

  • 3 Tbsp apple cider vinegar

  • 2 Tbsp maple syrup

  • 1 Tbsp Dijon mustard (or honey mustard)

  • 1/4 tsp each: salt & pepper


  • 8 ounces of cleaned Mac's Pride Kale

  • 1 1/2 cups shredded Mac's Pride Green Cabbage

  • 1/4 cup dried cranberries

  • 1/3 cup almonds or Mac's Pride Pecans, crushed or sliced


1.  Combine the oil, vinegar, maple syrup, mustard, salt and pepper in a mason jar and shake with a lid.

2. Add the kale and green cabbage to a large mixing bowl.  Toss with 1/2 the dressing.  Taste and adjust with additional dressing as desired.  Top with cranberries and nuts.  Let sit for 5-10 minutes before serving so the greens soak up all that yummy dressing!
