Collard Greens

Ingredients

  • 1 bunch of Mac's Pride Collards

  • 1lb. of bacon

  • 1/2 onion, diced

  • 1/4 cup apple cider vinegar

  • 4 cups of chicken broth

  • 1/2 tsp of sugar

  • 1/2 tsp of red pepper flakes

  • 1 whole pecan in shell

Directions

1.  Triple rinse collards under cool water.  To trim the leaves, slice the leaf down the middle along the center stem on both sides (removing the center stem). Take the two halves and lay them on top of each other creating a pile.  Roll together, and cut into strips.

2. Chop your onion and bacon. Begin cooking them in the bottom of your pot for about 5-7 minutes.

3. Add sliced collards, vinegar, broth, sugar, red pepper flakes, pecan, and salt and pepper to your pot.  Stir, and place the lid on your pot, and bring to a boil.  Allow to boil for 30-45 minutes. 

4. Turn heat down to a medium temperature, and cook until desired consistency.
