Peach Relish



  • 5 quarts of Mac's Pride Peaches (ripe but firm/chipped)

  • 5 quarts green tomatoes (chipped, sprinkle salt over tomatoes & let sit overnight, then pour all water off)​​

  • 4 quarts onions (chipped)

  • 5 # sugar

  • 1 quart vinegar

  • 1 2/3 bottle Pickling Spice (tied in cheese cloth)


1. Mix all ingredients together, along with spice bag. Cook medium heat, stirring often, until water starts to cook out approximately 1 1/2-2 hours. Put in sterilized jars and seal.
